Piri piri salmon with couscous and sweet potatoes

Piri piri marinade

  • 6 pcs. fresh chili
  • 2 pcs. garlic
  • 1 tsp. oregano
  • 50 ml olive oil
  • 1 tbsp. red wine vinegar
  • ¼ tsp. salt

The garlic is baked along with chili in the oven at 180 ° C for 10 minutes. All the ingredients are put in a blender and mixed well. 

Salmon

  • 600 g salmon

The salmon is cleaned and cut into 150 g pieces. The salmon is then covered in the piri piri marinade and baked in the oven at 200 ° C for 8 minutes.

Couscous 

  • 2 cups couscous
  • 2 tbsp. cumin, ground
  • 2 tbsp. coriander, ground
  • 1 tbsp. olive oil
  • 1  handfull  fresh coriander, chopped
  • 1 sweet potato
  • ¼ tsp. salt

Sweet potato is peeled and cut into cubes, then drizzled with olive oil and baked in the oven at 180 ° C for about 15 minutes. The couscous is mixed with cumin, coriander, olive oil and a little salt. Then, boiling water is poured into the mixture, a lid put over the bowl and the mixture is left for about 10 minutes. The sweet potato cubes and fresh coriander are then mixed with the couscous.

 

Wine selecion:
