Redfish crudo

Redfish crudo with blood orange, lemon and salad

Arrange the thinly sliced fish on a plate and season with salt and pepper. Grate the lemon and blood orange peel over the fish with a fine grater. Squeeze lemon and blood orange juice over the fish, drizzle the olive oil over it, then place the salad on the plate and serve.

Grilled monkfish

Grilled monkfish with creamed black cabbage and fresh asparagus

Fry the black cabbage and garlic with the butter in a pan for 2-3 minutes. Pour the cream into the pan and simmer for 5-8 minutes until the cream thickens.

Grilled romaine

Grilled romaine with date sauce, pine nuts and goat cheese

Put the dates, blueberries, water and rosé in a pot. Boil for 10 minutes, then mix together well in a food processor. Season with salt and lemon juice and keep until the sauce reaches room temperature.
